Vegan Buffalo Chickpea Tacos

 These flavorful and spicy Vegan Buffalo Chickpea Tacos are the perfect plant-based twist on a classic American favourite. Packed with tangy buffalo sauce, crispy chickpeas, and fresh toppings, they're a crowd-pleasing option for Taco Tuesday or any day of the week. Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup hot sauce (adjust to taste)
  • 1 tablespoon melted vegan butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sliced avocado
  • Vegan ranch dressing (optional)

Preparation:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the hot sauce, melted vegan butter, garlic powder, onion powder, paprika, salt, and pepper.
  3. Add the drained chickpeas to the sauce mixture and toss until well coated.
  4. Spread the chickpeas evenly on a baking sheet and bake for about 25-30 minutes, or until crispy, stirring once halfway through.
  5. While the chickpeas are baking, warm the corn tortillas in a dry skillet or microwave.
  6. Assemble the tacos by placing a scoop of crispy buffalo chickpeas onto each tortilla.
  7. Top with shredded lettuce, diced tomatoes, sliced avocado, and drizzle with vegan ranch dressing if desired.
