Ingredients:

1 cup quinoa, cooked and cooled

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/2 red onion, finely chopped

1/4 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/3 cup crumbled feta cheese (optional)

Juice of 1 lemon

2 tablespoons extra-virgin olive oil

Salt and pepper to taste



Instructions:

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Drizzle the dressing over the quinoa mixture and toss gently to coat all the ingredients.

If desired, sprinkle the crumbled feta cheese on top.

Refrigerate the salad for at least 30 minutes to allow the flavors to blend.

Serve chilled and enjoy!
