Ingredients:

  • 4 large bell peppers (assorted colors)
  • 1 cup cooked quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh cilantro, chopped (for garnish)

Process:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, sauté the diced onion and minced garlic until translucent.
  4. Add the cooked quinoa, black beans, corn kernels, cumin, paprika, chili powder, salt, and pepper to the skillet. Mix well and cook for a few minutes until the flavors combine.
  5. Stuff each bell pepper with the vegetable and quinoa mixture, pressing it down gently.
  6. Place the stuffed bell peppers in a baking dish and cover with foil.
  7. Bake for 25-30 minutes or until the bell peppers are tender.
  8. Remove the foil and sprinkle shredded cheese on top of each bell pepper. Bake for an additional 5 minutes or until the cheese is melted and bubbly.
  9. Remove from the oven and let them cool for a few minutes.
  10. Garnish with fresh cilantro and serve hot.
