Ingredients:
- 4 large bell peppers (assorted colors)
- 1 cup cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh cilantro, chopped (for garnish)
Process:
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a large skillet, sauté the diced onion and minced garlic until translucent.
- Add the cooked quinoa, black beans, corn kernels, cumin, paprika, chili powder, salt, and pepper to the skillet. Mix well and cook for a few minutes until the flavors combine.
- Stuff each bell pepper with the vegetable and quinoa mixture, pressing it down gently.
- Place the stuffed bell peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes or until the bell peppers are tender.
- Remove the foil and sprinkle shredded cheese on top of each bell pepper. Bake for an additional 5 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let them cool for a few minutes.
