Ingredients:

1 cup quinoa, cooked according to package instructions

1 tablespoon olive oil

1 small red onion, thinly sliced

2 cloves garlic, minced

1 cup asparagus, trimmed and cut into bite-sized pieces

1 cup sugar snap peas, trimmed

1 cup cherry tomatoes, halved

1 cup baby spinach or mixed greens

1/4 cup fresh basil leaves, torn

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Salt and pepper to taste

Optional toppings: crumbled feta cheese, sliced avocado, toasted nuts or seeds


Instructions:

In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, and sauté until softened and fragrant.

Add the asparagus and sugar snap peas to the skillet. Cook for about 3-4 minutes, until they are tender-crisp.

In a large bowl, combine the cooked quinoa, sautéed vegetables, cherry tomatoes, baby spinach or mixed greens, basil, and parsley.

Drizzle the lemon juice over the bowl and season with salt and pepper to taste. Toss gently to combine all the ingredients.

Serve the spring quinoa bowl as is or add optional toppings such as crumbled feta cheese, sliced avocado, or toasted nuts or seeds for extra flavour and texture.
